"Jerk" cooking originates from the continent of Africa, where from ancient times, meat was heavily seasoned with a variety of spicy harvested herbs and sap, placed in deep covered pots, and slow roasted for 12 - 14 hours 'til even the bones became edible! This is the same traditional method we use here at, "African Jerk".
